Ivaylo Dyulgerov joins the team of experienced specialists at Balneo Hotel Saint Spas 5 * Velingrad in the beginning of September 2019 as the chef of the main restaurant and all other catering establishments in the hotel. Chef Ivo, born in Varna, graduated Geo Milev High School, then departed for Amsterdam and in 2002 graduated Hotel School the Hauge – Amsterdam.

He began his professional career in Varna in 2003 as an assistant to the French gourmet George Lagarte, also known for his Michelin-starred restaurants in France. “I’m happy I had the opportunity to work with Chief Lagarte,” Ivaylo says. “France is a country renowned for its culinary innovations … The French are unique,” adds Chef Ivo.

In 2004, Chef Dyulgerov began working on ships, working alongside Royal Caribbean alongside world-renowned chef and technologist on the cruise line, Jamie Oliver. At the same time, the chef of Hotel Saint Spas also consulted many establishments in Sofia, Varna and Plovdiv. He has prepared menus of the best kindergarten in Bulgaria for healthy eating – VIP Baby – where children consume the right calories for their age, using entirely healthy products from selected manufacturers. Last but not least, Chief Ivo also organized dinners at the expense of celebrities such as Georgi Parvanov, Boyko Borisov, Ahmet Dogan and many others.

“It was a pleasure to work with the unique health nutrition technologist Zdravka Maksurova,” says Ivo, “preparing menus for her clients in both Bulgaria and Miami.”

Nowadays Chef Ivaylo Dyulgerov presents the new menu of Balneo Hotel Saint Spas 5 *, the basis of which is authentic Bulgarian cuisine, combined with segments from French, Italian and Sicilian cuisine. The new pizzas are also made with selected Neapolitan Italian flour, and the tiramisu is unsurpassed, home-made with natural products flavoured with Marsala cream.
